Tomato Salad with Guacamole

This isn't so much of a recipe as it is inspiration for summer to come faster than the speed with which it's currently moving. As a former Californian, now Dutch ex-pat, I desperately need more summer in my life....


When fresh summer tomatoes are in season there are many ways to play with them, but last summer this was a favorite. I made a standard guacamole, using avocados, lime juice, diced onion, minced jalapeño, cilantro, s&p and a dash of cumin powder. Then I smeared it out on a large flat plate, sliced some juicy tomatoes and fanned them out in a circle. You can choose to add more guacamole on top or not. For fancy fun, I used cilantro flowers as garniture (decoration).


It is too easy and with some tortilla chips, it's perfect for sharing!
