Watermelon & Feta Salad

Yes! It's almost summer, which means....WATERMELON! Refresh yourself and your guests with some fun watermelon recipes this summer, like this one adding feta cheese and a zesty dressing, which also happens to contain a little rosé wine amongst its ingredients.

Watermelon & Feta Salad

serves 2

300 g watermelon cubed (for fancier make them uniform pieces, for family style, it's your choice)

170 g feta cheese - crumbled

30 g shallots -chopped

6 g mint - chopped

6 cilantro - chopped (substitute parsley for the cilantro haters....we know you live amongst us)

Dressing

20 ml agave syrup

25 ml good quality extra virgin olive oil

1 lemon zested

1 lime zested

25 ml lemon juice

35 ml lime juice

1 T rosé wine - 15 ml

s&p

*omit the rosé wine for those who would prefer a non-alcoholic version of this dressing


Mix the dressing ingredients together in a large bowl and set aside. Thinly slice or finely chop the herbs and add to the bowl.


Cut the watermelon in cubes. Julienne the shallots very thinly. Add the watermelon, shallots and the crumbled feta to the bowl. Mix well and serve.


*If you are making this recipe in advance, the watermelon will begin to ooze its "water" and make for a saucier dish, but also with a lot of "marinated" flavors. Either is fine, but be aware, the color fades a little. Yum!
